Pumpkin Cupcakes with Cream Cheese Frosting

To celebrate the new season, I wanted to make some fall-inspired cupcakes. These are pumpkin cupcakes with cinnamon, nutmeg and allspice. The frosting is cinnamon-cream cheese with cinnamon sugar sprinkled on top.

I did not want the frosting to be super sweet, more like a cheesecake swirl on top. It was soooo yummy. The cupcakes were very moist and delicious. I wish there were some left over because I want one right now! hehe

Six-Cupcake Carrier

I have the Wilton 3-in-1 cake carrier. I like that it locks and has the handle for transporting. It also has an insert for carrying 12 cupcakes or 24 mini cupcakes. Even with the indents, I've still had some rogue cupcakes topple over while transporting them in the carrier. I have been searching around online for different carriers, but the same two keep popping up! Thus, I was inspired to create my own.

The boxes I've been working on are made for six cupcakes. These will be perfect for bringing cupcakes to share with a couple friends (so that Stephen has the remaining 18 all to himself). I cut the circles so that the bottom of the cakes rest in the box and the box top hugs the middle of the cupcake, so they're super secure.

Here are a few that I've made so far:

Toy Box Cake

Hi again!

A few weeks ago, I had my first attempt at fondant with the Super Mario cupcakes. It was a lot of fun, kinda like Play-Doh! :)

We celebrated Stephen's nephew's christening today (he is too precious!). I originally thought of making Noah's ark cupcakes with fondant animals, but I knew I'd have a hard enough time making one animal look how I wanted it, let alone TWO of kind! So, the idea evolved into a "toy box" themed cake.

Here is the front view:

The sides of the box are graham crackers covered in mint green tinted fondant. This worked way better in my head than on the cake! Trial and error, right?!

There are fondant toys: lion, clown, elephant, monkey, ducky, small blocks, bunny, "Cholly" dolly, turtle, kite, baseball and bat. (The giraffe's head fell off, otherwise he'd be in there, too! :P)

...and there are a couple pieces made from melted wafers: airplane, firetruck, train, sailboat, large "ALEX" blocks.

I had a hard time making fondant cubes look, well, cubic, so I used my silicone baking pan as a chocolate mold.

Here's Cholly:

Stephen made the turtle! :)

I think if I attempt to do this type of cake again, I'll use a mini loaf cake for the trunk. The graham cracker walls were not super stable and sadly did not hold up for the hour in the car (slow down, Stephen!). It also didn't help that the cake was too tall for my Wilton cake carrier. I've been googling tall cake carriers since we got back! No luck yet...

Hope to share a new project with you soon! :)

Monarch Butterfly Cupcakes

Stephen is super encouraging of my new baking hobby (he's the taste-tester!), so he got me the book "Hello, Cupcake" for some ideas. I love, love, LOVED the monarch butterfly cupcakes and thought they'd be great for our friends' engagement party.

As per the book, I painted the wings onto waxed paper with melted orange and dark chocolate wafers. I was a little bit disappointed with the dull orange color of the wafers. The wings in the book looked more vibrant. Next time, I think I'll try making my own orange by mixing colors.

I also tried the semi-homemade recipe from the book (used yellow cake mix, replaced the water with a cup of buttermilk and added an extra egg), which turned out nicely. They rose nicely and were very moist. Yum!

Welcome!

Hi, I'm Kate. I am an elementary music teacher and recently got into baking. I am super new to cupcakery so any tips would be much appreciated. I hope you enjoy!

Super Mario Bros. Cupcakes

These cupcakes were made for my brother-in-law Josh for his birthday. Josh is a gamer so I thought Super Mario would be perfect. These are not an entirely original design -- they were inspired by something I stumbled upon on the web. This was my very first time working with fondant, and I must say, I'm pretty proud! :)
